Dried Thai Red Hot Chili Peppers — The Heat Behind Thai Cuisine

Small ingredient. Serious character.

Krittiya Garden Dried Thai Red Hot Chili Peppers bring the unmistakable heat, colour and aroma of Thai chilies into your kitchen.

Carefully dried and packed whole, these red chili peppers can be used in everything from traditional Thai curries and soups to stir-fries, dipping sauces, chili oils and homemade curry pastes.

Use them whole for gradual heat, crush them for texture or grind them into chili flakes or powder for a more evenly distributed kick.

For anyone exploring authentic Thai cooking, dried chilies are more than simply a source of heat.

They are part of the flavour architecture of Thai cuisine.

An Essential Ingredient in Thai Cooking

Chili peppers have become inseparable from the identity of Thai cuisine.

Across Thailand, dried chilies appear in countless preparations — sometimes providing intense heat, sometimes colour and aroma, and sometimes forming part of a larger balance between:

Spicy • Sour • Salty • Sweet • Aromatic

They can be toasted, soaked, crushed, ground or incorporated directly into dishes depending on the recipe.

This versatility makes dried red chilies one of the most useful Thai ingredients to keep in the pantry.

What Do Dried Thai Red Chilies Taste Like?

Dried chili is not simply “hot.”

Drying changes the sensory character of fresh chilies, concentrating and developing their flavour.

Depending on the chili variety and preparation, expect characteristics such as:

Hot • Pungent • Earthy • Fruity • Warm • Aromatic

The precise heat level can vary naturally between peppers and harvests.

The Natural Heat of Chili

The characteristic heat of chili peppers comes primarily from naturally occurring compounds called capsaicinoids, with capsaicin being the best-known.

Capsaicin activates heat-sensitive receptors in the mouth, producing the familiar sensation we perceive as chili “heat.”

Interestingly, this sensation is not the same thing as food being physically hot in temperature — it is a sensory response triggered by chili’s naturally occurring compounds.

Whole Chilies, More Ways to Cook

Keeping the chilies whole gives you flexibility in the kitchen.

Use Whole

Add directly to soups, broths, curries or sauces for flavour and heat.

Crush

Break into smaller pieces for stir-fries, noodle dishes and dipping sauces.

Grind

Grind into homemade chili flakes or chili powder.

Soak

Rehydrate dried chilies in warm water when preparing curry pastes and sauces.

Toast

Lightly toast according to your recipe to develop a deeper aroma before crushing or grinding.

Caution: Avoid overheating or burning chilies. Chili fumes can strongly irritate the eyes and respiratory tract.

I man who that love spicy food especially thai food is my favorite, I can eat J-peppers without any problem. These thai peppers are way hotter than j-peppers or Serrano pepper. They arrive in a aluminium foil bag with a built in ziplock closure. I took about 10 grams and ran them through my grinder for turn them to something that looks like general crushed red peppers.
just small amount can raise the temp of entire food on frying pan, I just used 1/3 teaspoon of ground peppers and it increased a lot of hot to the food, but it just hot , didn’t offer any flovor. I love package of this brand, the ziplock foil bag will keep product quality for long time.

I love spicy food and hot spicy is my favorite. I can eat J-peppers without much problem. These peppers are way way hotter than j-peppers or serranos. They arrive in a foil lined plastic bag with a built in ziplok closure. I took about 8 peppers and ran them through my coffee bean grinder to turn them into something that looks like ordinary crushed red peppers. A small amount can raise the temp on an entire frying pan of food, I used 1/3 teaspoon of ground peppers and it added a LOT of heat to my food, but didn’t really offer any flavor, just heat. I love these peppers and I think the bag will last me a good long time. The burn these added to the food came on slowly during eating.Summary: they added a lot of heat but not much flavor. Use sparingly!

How to Use Dried Thai Chili Peppers

Use Whole

Add whole dried chilies directly to soups, curries, sauces or broths to introduce heat and chili character during cooking.

Remove before serving if preferred.

Rehydrate

Place the dried chilies in warm or hot water and soak until softened.

Drain before using them in curry pastes, chili sauces or other recipes.

Crush into Chili Flakes

Remove the stems if desired and crush the dried chilies into flakes.

Use them to season:

Noodles • Stir-Fries • Soups • Pizza • Rice Dishes • Dipping Sauces

Grind into Chili Powder

Grind completely dried chilies using a spice grinder to create homemade chili powder.

Allow airborne chili dust to settle before opening the grinder and avoid breathing the powder.

For Thai Curry Paste

Rehydrate the chilies until softened, drain and combine with the other ingredients specified in your curry-paste recipe.

Lightly Toast

Some Thai recipes call for dried chilies to be lightly toasted before grinding or crushing.

Toast carefully over moderate heat and do not allow the chilies to burn, as smoke and chili fumes can irritate the eyes and respiratory tract.

Handling Tip

Capsaicin can remain on the hands after handling hot chilies.

Avoid touching your eyes, nose or face, wash your hands thoroughly after handling, and consider using food-safe gloves when preparing larger quantities.

What are Dried Thai Red Hot Chili Peppers?
They are red chili peppers that have been dried to preserve and concentrate their distinctive spicy and aromatic character for culinary use.

Are these whole chili peppers?
Yes, if confirmed by the SKU. This product should be described as whole dried chili peppers rather than flakes or powder.

How spicy are Thai dried chilies?
Thai chilies are generally known for pronounced heat, but the actual intensity varies considerably according to chili variety, maturity, growing conditions and individual pepper.

What is the Scoville rating?
Do not publish a specific Scoville Heat Unit (SHU) range unless the exact chili variety and/or product testing supports it. “Thai chili” is not sufficiently specific to guarantee one Scoville rating.

What makes chili peppers hot?
Their characteristic heat comes primarily from naturally occurring capsaicinoids, including capsaicin.

Are dried chilies hotter than fresh chilies?
Drying removes water and changes the concentration and sensory experience of the chili, but it is not accurate to assume every dried chili will simply be “hotter” than its fresh equivalent. Variety and serving amount matter significantly.

How can I use Dried Thai Chili Peppers?
They can be used whole, rehydrated, crushed into flakes or ground into powder. They work particularly well in curries, soups, stir-fries, sauces, chili pastes and dipping sauces.

Do I need to soak dried chilies before cooking?
Not always. Rehydrating is useful when making curry pastes or sauces where a softer texture is required. Other recipes may use dried chilies directly.

Can I grind them into chili powder?
Yes. Make sure the chilies are sufficiently dry and use an appropriate spice grinder. Avoid inhaling airborne chili powder.

Can I make chili flakes with them?
Yes. Dried whole chilies can be crushed into flakes and used as a seasoning.

Can I use them for Thai curry paste?
Yes. Dried red chilies are an important ingredient in several styles of Thai curry paste. The exact type and quantity depend on the recipe.

Can I use them for chili oil?
Dried chilies are commonly used in chili oils, but oil-based preparations require appropriate food-safety practices. Follow a tested recipe and storage method rather than improvising long-term room-temperature storage.

Do I need to remove the seeds?
It depends on the recipe and desired texture. Seeds can be removed when preparing some curry pastes or sauces, but they do not always need to be removed.

Are the seeds the hottest part of a chili?
Not exactly. Much of the capsaicin is concentrated in the internal placental tissue to which the seeds are attached. Seeds can become coated with capsaicinoids, but they are not the primary site where capsaicin is produced.

Can I eat Dried Thai Chili Peppers directly?
They are intended as a culinary ingredient. Because they can be intensely spicy, use an appropriate amount according to your tolerance and recipe.

Why does touching chili sometimes burn my skin or eyes?
Capsaicin activates sensory receptors associated with heat and irritation. Wash your hands thoroughly after handling and avoid touching the eyes or face.

What should I do if chili feels too hot in my mouth?
Capsaicin is poorly soluble in water, so drinking plain water may provide limited relief. Dairy-containing foods can sometimes help disperse capsaicin better. Individual dietary restrictions should of course be considered.

Can children eat these chilies?
Because these are hot chili peppers, use particular care with children and keep the package out of reach of young children. Heat tolerance varies greatly.

Are Dried Thai Chili Peppers caffeine-free?
Chili peppers do not naturally contain caffeine. For this product, however, caffeine-free is not a useful selling point because consumers are purchasing it as a culinary ingredient rather than a beverage.

How should I store Dried Thai Chili Peppers?
Keep the package tightly sealed in a cool, dry place away from direct sunlight, excessive heat and moisture. Proper storage helps preserve colour, aroma and flavour.

Are these chilies a product of Thailand?
Use “Product of Thailand” only if this is confirmed by the actual product packaging and supply documentation.
